Crust:
- 1 cup unsalted butter, softened
- 1/2 cup granulated sugar
- 2 cups all-purpose flour, divided
Lemon Filling:
- 4 large eggs
- 2 cups granulated sugar
- 1/2 cup fresh lemon juice (about 2–3 lemons)
Additional:
- Powdered sugar for dusting (optional)
Instructions
- Preheat the oven: Preheat the oven to 350°F (175°C). Line a 9×13-inch baking pan with parchment paper, leaving some overhang for easy removal.
- Prepare the crust: In a medium bowl, cream together the softened butter and 1/2 cup granulated sugar until light and fluffy. Add 2 cups of flour and mix until a crumbly dough forms. Press the dough evenly into the bottom of the prepared pan to form the crust. Bake for 15-18 minutes, or until lightly golden.
- Make the lemon filling: In a large bowl, whisk together the eggs, 2 cups granulated sugar, and fresh lemon juice until smooth. Sift in the remaining 1/4 cup flour and whisk until well combined. Pour the lemon mixture over the hot crust and return to the oven.
- Bake: Bake for 20-25 minutes, or until the filling is set and just slightly golden around the edges. Remove from the oven and let cool completely in the pan.
- Finish and serve: Once cool, lift out using the parchment paper and dust with powdered sugar if desired. Cut into squares and enjoy!
Notes
- Store leftover lemon bars in an airtight container in the refrigerator for up to 5 days.
- For extra tang, add a bit of lemon zest to the filling.
