Crust:

  • 1 cup unsalted butter, softened
  • 1/2 cup granulated sugar
  • 2 cups all-purpose flour, divided

Lemon Filling:

  • 4 large eggs
  • 2 cups granulated sugar
  • 1/2 cup fresh lemon juice (about 23 lemons)

Additional:

  • Powdered sugar for dusting (optional)

Instructions

  1. Preheat the oven: Preheat the oven to 350°F (175°C). Line a 9×13-inch baking pan with parchment paper, leaving some overhang for easy removal.
  2. Prepare the crust: In a medium bowl, cream together the softened butter and 1/2 cup granulated sugar until light and fluffy. Add 2 cups of flour and mix until a crumbly dough forms. Press the dough evenly into the bottom of the prepared pan to form the crust. Bake for 15-18 minutes, or until lightly golden.
  3. Make the lemon filling: In a large bowl, whisk together the eggs, 2 cups granulated sugar, and fresh lemon juice until smooth. Sift in the remaining 1/4 cup flour and whisk until well combined. Pour the lemon mixture over the hot crust and return to the oven.
  4. Bake: Bake for 20-25 minutes, or until the filling is set and just slightly golden around the edges. Remove from the oven and let cool completely in the pan.
  5. Finish and serve: Once cool, lift out using the parchment paper and dust with powdered sugar if desired. Cut into squares and enjoy!
