Potato Mixture:
- 6 medium russet potatoes, peeled and thinly sliced
- 2 tablespoons butter
- 1 small onion, finely diced
- 2 cloves garlic, minced
- 1 cup sour cream
- 1/2 cup milk
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 teaspoon cayenne pepper (optional)
- 2 cups shredded Pepper Jack cheese
Optional Toppings:
- 1/2 cup shredded cheddar cheese
- 1/4 cup chopped green onions or fresh parsley
Instructions
- Preheat and Prepare: Preheat oven to 375°F (190°C) and grease a 9×13-inch baking dish.
- Sauté Onions and Garlic: In a skillet, melt butter and cook onion and garlic until soft; set aside.
- Prepare Potato Mixture: In a bowl, mix sour cream, milk, salt, pepper, and cayenne. Add sautéed onions and garlic, sliced potatoes, and 1 1/2 cups of Pepper Jack cheese.
- Assemble and Bake: Spread potato mixture in dish, top with remaining cheeses, cover with foil, and bake for 45 minutes. Remove foil and bake an additional 15–20 minutes until golden and bubbly. Let sit before serving; garnish if desired.
Notes
- For added heat, consider adding diced jalapeños or using hot Pepper Jack cheese.
