These Addictive Dan Dan Noodles are a flavorful and spicy Chinese noodle dish featuring a rich sesame sauce and savory pork topping. Perfect for a quick and satisfying meal!

  • 3 tablespoons sesame paste or tahini
  • 2 tablespoons soy sauce
  • 1 tablespoon Chinese black vinegar (or rice vinegar)
  • 1 tablespoon chili oil (or more to taste)
  • 1 teaspoon sugar
  • 1/2 teaspoon Sichuan peppercorns (ground)
  • 1 clove garlic (minced)
  • 2 tablespoons hot water

For the meat topping:

  • 1/2 pound ground pork
  • 1 tablespoon soy sauce
  • 1 tablespoon hoisin sauce
  • 1 teaspoon sesame oil
  • 1/2 teaspoon ginger (minced)
  • 1 green onion (sliced)

For assembly:

  • 8 ounces wheat noodles (or ramen noodles)
  • 1/4 cup chopped roasted peanuts
  • 1/4 cup sliced green onions
  • extra chili oil and sesame seeds for topping (optional)

Instructions

  1. Prepare the sauce: In a small bowl, whisk together sesame paste, soy sauce, vinegar, chili oil, sugar, Sichuan peppercorns, garlic, and hot water until smooth. Set aside.
  2. Cook the noodles: Cook noodles according to package instructions. Drain and set aside.
  3. Cook the meat topping: In a skillet over medium heat, cook the ground pork until browned and crispy. Add soy sauce, hoisin, ginger, and green onion. Cook until well coated and fragrant.
  4. Assemble: Divide the sauce between serving bowls. Add noodles, then spoon over the pork mixture. Garnish with peanuts, green onions, and extra chili oil if desired. Toss before eating.

  • For a vegetarian version, use finely chopped mushrooms or crumbled tofu instead of pork.
