For the sauce:
- 3 tablespoons sesame paste or tahini
- 2 tablespoons soy sauce
- 1 tablespoon Chinese black vinegar (or rice vinegar)
- 1 tablespoon chili oil (or more to taste)
- 1 teaspoon sugar
- 1/2 teaspoon Sichuan peppercorns (ground)
- 1 clove garlic (minced)
- 2 tablespoons hot water
For the meat topping:
- 1/2 pound ground pork
- 1 tablespoon soy sauce
- 1 tablespoon hoisin sauce
- 1 teaspoon sesame oil
- 1/2 teaspoon ginger (minced)
- 1 green onion (sliced)
For assembly:
- 8 ounces wheat noodles (or ramen noodles)
- 1/4 cup chopped roasted peanuts
- 1/4 cup sliced green onions
- extra chili oil and sesame seeds for topping (optional)
Instructions
- Prepare the sauce: In a small bowl, whisk together sesame paste, soy sauce, vinegar, chili oil, sugar, Sichuan peppercorns, garlic, and hot water until smooth. Set aside.
- Cook the noodles: Cook noodles according to package instructions. Drain and set aside.
- Cook the meat topping: In a skillet over medium heat, cook the ground pork until browned and crispy. Add soy sauce, hoisin, ginger, and green onion. Cook until well coated and fragrant.
- Assemble: Divide the sauce between serving bowls. Add noodles, then spoon over the pork mixture. Garnish with peanuts, green onions, and extra chili oil if desired. Toss before eating.
Notes
- For a vegetarian version, use finely chopped mushrooms or crumbled tofu instead of pork.
- Adjust chili oil and peppercorns to taste.
