  • 1/3 cup cornstarch
  • 1/2 teaspoon salt

  • 1 tablespoon olive oil
  • 1/2 cup chopped red bell pepper
  • 1/2 cup chopped green bell pepper
  • 1/2 cup pineapple chunks (canned or fresh)
  • 1 tablespoon chopped green onions (optional)

Sweet and Sour Sauce:

  • 1/4 cup ketchup
  • 1/4 cup rice vinegar
  • 1/4 cup light brown sugar
  • 2 tablespoons soy sauce
  • 1 teaspoon cornstarch mixed with 1 tablespoon water

Instructions

  1. Coat Chicken: Toss chicken with cornstarch, salt, pepper, and garlic powder.
  2. Preheat Air Fryer: Set to 380°F (193°C) and lightly oil the basket.
  3. Air Fry Chicken: Cook for 10–12 minutes, shaking halfway through.
  4. Make Sauce: Simmer ketchup, rice vinegar, brown sugar, soy sauce, and cornstarch slurry.
  5. Add Veggies: In the last 2 minutes, add bell peppers and pineapple to the air fryer.
  6. Combine: Toss chicken, veggies, and sauce together. Garnish with green onions.
