Potatoes:

  • 4 large russet potatoes
  • 1 tablespoon olive oil
  • 1 teaspoon salt

Filling:

  • 4 slices bacon, cooked and crumbled
  • 1/2 cup sour cream
  • 1/4 cup milk
  • 4 tablespoons unsalted butter
  • 1 cup shredded cheddar cheese, divided
  • 2 green onions, sliced
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon black pepper

Instructions

  1. Prep Potatoes: Scrub and dry potatoes, rub with olive oil, sprinkle with salt, air fry at 400°F for 35-40 minutes.
  2. Prepare Filling: Scoop out potato flesh, mix with sour cream, milk, butter, cheese, bacon, green onions, garlic powder, salt, and pepper.
  3. Fill Potatoes: Spoon filling into shells, top with remaining cheddar cheese, air fry at 375°F for 5-7 minutes.
