Potatoes:
- 4 large russet potatoes
- 1 tablespoon olive oil
- 1 teaspoon salt
Filling:
- 4 slices bacon, cooked and crumbled
- 1/2 cup sour cream
- 1/4 cup milk
- 4 tablespoons unsalted butter
- 1 cup shredded cheddar cheese, divided
- 2 green onions, sliced
- 1/2 teaspoon garlic powder
- 1/4 teaspoon black pepper
Instructions
- Prep Potatoes: Scrub and dry potatoes, rub with olive oil, sprinkle with salt, air fry at 400°F for 35-40 minutes.
- Prepare Filling: Scoop out potato flesh, mix with sour cream, milk, butter, cheese, bacon, green onions, garlic powder, salt, and pepper.
- Fill Potatoes: Spoon filling into shells, top with remaining cheddar cheese, air fry at 375°F for 5-7 minutes.
