Description

These crispy Air Fryer Vegetable Spring Rolls are filled with a colorful assortment of veggies and seasoned to perfection. A healthier alternative to traditional deep-fried spring rolls, they make a delicious appetizer or snack!


Ingredients

Filling:

  • 1 tablespoon sesame oil
  • 2 cups shredded green cabbage
  • 1 cup shredded carrots
  • 1/2 cup thinly sliced bell pepper
  • 1/2 cup thinly sliced mushrooms
  • 2 green onions, chopped
  • 2 cloves garlic, minced
  • 1 tablespoon soy sauce
  • 1 teaspoon grated ginger
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Additional:

  • 12 spring roll wrappers
  • olive oil spray

Instructions

  1. Sauté Vegetables: In a large skillet, sauté cabbage, carrots, bell pepper, mushrooms, and green onions with garlic, soy sauce, ginger, salt, and pepper until softened.
  2. Fill Wrappers: Place filling on spring roll wrappers, fold, and roll tightly, sealing edges with water.
  3. Air Fry: Preheat air fryer, spray rolls with oil, and air fry until golden and crispy.

Notes

  • Serve with sweet chili sauce, soy sauce, or peanut dipping sauce.
  • To make ahead, freeze uncooked rolls and air fry from frozen with additional time.
