Ingredients
Rolled Oats:
2 cups
Raw Almonds:
1 cup, roughly chopped
Dried Blueberries:
1/2 cup
Pitted Dates:
1/2 cup, chopped
Honey or Maple Syrup:
1/4 cup
Unsweetened Almond Butter:
1/4 cup
Coconut Oil:
2 tablespoons, melted
Vanilla Extract:
1 teaspoon
Salt:
1/4 teaspoon
Instructions
- Prepare the Pan: Line an 8×8-inch baking pan with parchment paper.
- Mix Dry Ingredients: In a large bowl, combine the rolled oats, chopped almonds, dried blueberries, and chopped dates.
- Prepare Wet Mixture: In a small saucepan over low heat, stir together the honey or maple syrup, almond butter, melted coconut oil, vanilla extract, and salt until smooth and warm.
- Combine and Transfer: Pour the wet mixture over the dry ingredients and stir until everything is evenly coated. Transfer the mixture to the prepared pan and press it down firmly.
- Chill: Refrigerate for at least 2 hours or until firm.
- Cut and Store: Lift the mixture out of the pan and cut into bars. Store in an airtight container in the refrigerator for up to one week.
