Description

These Almond, Blueberry & Date Homemade Granola Bars are a delicious and wholesome snack option that is perfect for a quick energy boost. Packed with oats, almonds, dried blueberries, and dates, these bars are sweetened with honey and almond butter for a natural and satisfying treat.


Ingredients

Rolled Oats:

2 cups

Raw Almonds:

1 cup, roughly chopped

Dried Blueberries:

1/2 cup

Pitted Dates:

1/2 cup, chopped

Honey or Maple Syrup:

1/4 cup

Unsweetened Almond Butter:

1/4 cup

Coconut Oil:

2 tablespoons, melted

Vanilla Extract:

1 teaspoon

Salt:

1/4 teaspoon


Instructions

  1. Prepare the Pan: Line an 8×8-inch baking pan with parchment paper.
  2. Mix Dry Ingredients: In a large bowl, combine the rolled oats, chopped almonds, dried blueberries, and chopped dates.
  3. Prepare Wet Mixture: In a small saucepan over low heat, stir together the honey or maple syrup, almond butter, melted coconut oil, vanilla extract, and salt until smooth and warm.
  4. Combine and Transfer: Pour the wet mixture over the dry ingredients and stir until everything is evenly coated. Transfer the mixture to the prepared pan and press it down firmly.
  5. Chill: Refrigerate for at least 2 hours or until firm.
  6. Cut and Store: Lift the mixture out of the pan and cut into bars. Store in an airtight container in the refrigerator for up to one week.
