  • 2 cups chicken broth or vegetable broth

Green Herb Mixture:

  • 1 cup fresh cilantro leaves, packed
  • 1/2 cup fresh parsley leaves
  • 1 small jalapeño, seeded and chopped
  • 2 green onions, chopped
  • 1 garlic clove
  • 2 tablespoons fresh lime juice
  • 2 tablespoons olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Prepare Green Herb Mixture: In a blender or food processor, combine cilantro, parsley, jalapeño, green onions, garlic, lime juice, olive oil, salt, and pepper. Blend until smooth.
  2. Cook Rice: In a saucepan, combine rinsed rice and broth. Bring to a boil, then reduce heat, cover, and simmer for 15 minutes. Let it sit for 5 minutes off heat.
  3. Combine and Serve: Fluff the rice with a fork and mix in the green herb mixture. Adjust seasoning if necessary. Serve warm with lime wedges.
