Rice:
- 1 cup long-grain white rice or basmati rice, rinsed
- 2 cups chicken broth or vegetable broth
Green Herb Mixture:
- 1 cup fresh cilantro leaves, packed
- 1/2 cup fresh parsley leaves
- 1 small jalapeño, seeded and chopped
- 2 green onions, chopped
- 1 garlic clove
- 2 tablespoons fresh lime juice
- 2 tablespoons olive oil
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
- Prepare Green Herb Mixture: In a blender or food processor, combine cilantro, parsley, jalapeño, green onions, garlic, lime juice, olive oil, salt, and pepper. Blend until smooth.
- Cook Rice: In a saucepan, combine rinsed rice and broth. Bring to a boil, then reduce heat, cover, and simmer for 15 minutes. Let it sit for 5 minutes off heat.
- Combine and Serve: Fluff the rice with a fork and mix in the green herb mixture. Adjust seasoning if necessary. Serve warm with lime wedges.
