Description

This Amazing Persimmon Bread is a moist and flavorful quick bread packed with fragrant spices, sweet persimmon puree, crunchy nuts, and juicy raisins. Perfect for a cozy snack or breakfast treat, this easy-to-make bread combines warm cinnamon, nutmeg, and ginger with the natural sweetness of ripe persimmons to create a delightful autumn-inspired loaf.

Ingredients

Scale

Dry Ingredients

  • 1 ¾ cups all-purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon baking powder
  • ½ teaspoon salt
  • 1 teaspoon cinnamon
  • ½ teaspoon nutmeg
  • ½ teaspoon ground ginger

Wet Ingredients

  • 1 cup persimmon puree (from 23 ripe persimmons)
  • 1 cup sugar
  • ½ cup unsalted butter, melted
  • 2 large eggs
  • 1 teaspoon vanilla extract

Add-Ins

  • ½ cup chopped walnuts or pecans
  • ½ cup raisins

Instructions

  1. Preheat Oven and Prepare Pan: Preheat your oven to 350°F (175°C). Grease and flour a 9×5-inch loaf pan, or alternatively, line it with parchment paper to prevent sticking.
  2. Mix Dry Ingredients: In a medium bowl, whisk together the all-purpose flour, baking soda, baking powder, salt, cinnamon, nutmeg, and ground ginger until well combined and evenly distributed.
  3. Combine Wet Ingredients: In a large mixing bowl, stir together the persimmon puree, sugar, melted butter, eggs, and vanilla extract until the mixture is smooth and thoroughly blended.
  4. Incorporate Dry into Wet: Gradually add the dry ingredient mixture into the wet ingredients, stirring gently just until everything is combined. Avoid overmixing to keep the bread tender.
  5. Add Nuts and Raisins: Fold in the chopped walnuts or pecans and raisins evenly through the batter, distributing them well.
  6. Fill Loaf Pan and Bake: Pour the batter into the prepared loaf pan, smoothing the top with a spatula for even baking. Place the pan in the oven and bake for 55 to 60 minutes, or until a toothpick inserted into the center comes out clean.
  7. Cool the Bread: Remove the bread from the oven and let it cool in the pan for about 10 minutes. Then transfer it onto a wire rack to cool completely before slicing and serving.

Notes

  • Make sure persimmons are ripe and soft for the best puree and flavor.
  • You can substitute nuts or omit them for a nut-free version.
  • If you prefer a sweeter bread, increase sugar by 2 tablespoons.
  • Store tightly wrapped at room temperature for up to 3 days or freeze for longer storage.
  • Check doneness by inserting a toothpick in the center; it should come out clean or with a few moist crumbs.
