Description

These Ambrosia Muffins are a delightful tropical twist on classic muffins, bursting with the flavors of coconut, pineapple, and mandarin oranges. They are perfect for a sweet breakfast treat or a snack any time of day.

  • 1/2 cup milk
  • 1/2 cup plain Greek yogurt
  • 1/3 cup vegetable oil
  • 2 large eggs
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat the oven: Preheat the oven to 375°F (190°C) and line a 12-cup muffin tin with paper liners.
  2. Mix dry ingredients: In a large bowl, whisk together the dry ingredients.
  3. Combine wet ingredients: In another bowl, whisk together the wet ingredients including crushed pineapple and mandarin oranges.
  4. Combine wet and dry: Gently fold the wet ingredients into the dry ingredients until just combined.
  5. Fill muffin cups: Divide the batter into the muffin cups, sprinkle with coconut if desired.
  6. Bake: Bake for 18–22 minutes until a toothpick inserted comes out clean.
  7. Cool and serve: Let muffins cool in the pan before transferring to a wire rack to cool completely.
