- 1/3 cup vegetable oil
- 2 large eggs
- 1 teaspoon vanilla extract
Instructions
- Preheat the oven: Preheat the oven to 375°F (190°C) and line a 12-cup muffin tin with paper liners.
- Mix dry ingredients: In a large bowl, whisk together the dry ingredients.
- Combine wet ingredients: In another bowl, whisk together the wet ingredients including crushed pineapple and mandarin oranges.
- Combine wet and dry: Gently fold the wet ingredients into the dry ingredients until just combined.
- Fill muffin cups: Divide the batter into the muffin cups, sprinkle with coconut if desired.
- Bake: Bake for 18–22 minutes until a toothpick inserted comes out clean.
- Cool and serve: Let muffins cool in the pan before transferring to a wire rack to cool completely.
Notes
- For a sweeter muffin, add 1/4 cup more sugar.
- You can substitute walnuts for pecans or omit nuts entirely.
- For extra flavor, drizzle with a light glaze made of powdered sugar and orange juice.
