Instructions

  2. Mix Butter and Sugar: In a large bowl, cream together the softened butter and sugar until light and fluffy.
  3. Add Eggs and Vanilla: Beat in the eggs one at a time, then add the vanilla extract and mix until smooth.
  4. Combine Dry Ingredients: In a separate bowl, whisk together the flour, cocoa powder, baking soda, and salt.
  5. Combine Wet and Dry Mixtures: Gradually add the dry ingredients to the wet ingredients and mix until just combined.
  6. Add Mint Chips: Fold in the Andes mint chips until evenly distributed.
  7. Bake: Scoop rounded tablespoons of dough onto the prepared baking sheet, spacing them about 2 inches apart. Bake for 8-10 minutes.
  8. Add Toppings: If desired, press an extra Andes mint into the top of each cookie right after baking.
  9. Cool and Serve: Let the cookies cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
