- 1 small yellow onion, diced
- 3 cloves garlic, minced
- 1/2 teaspoon dried oregano
- 1/2 teaspoon dried basil
- 1/4 teaspoon crushed red pepper flakes (optional)
- 1 can (14.5 oz) diced tomatoes
- 4 cups chicken broth
- 1 package (9 oz) refrigerated cheese tortellini
- 2 cups baby spinach
- 1/2 cup heavy cream
- 1/2 cup grated Parmesan cheese
- Salt and pepper, to taste
Instructions
- Prepare the Base: Heat olive oil in a large pot over medium heat. Cook diced onion until softened, about 5 minutes.
- Add Flavor: Stir in garlic, oregano, basil, and red pepper flakes (if using); cook for 1 minute.
- Simmer: Add diced tomatoes and chicken broth. Bring to a boil, then simmer for 5 minutes.
- Cook Tortellini: Add tortellini and cook for 4-6 minutes according to package instructions.
- Add Spinach: Stir in spinach and cook until wilted.
- Make it Creamy: Lower heat, add heavy cream and Parmesan cheese. Stir until creamy.
- Season and Serve: Season with salt and pepper. Serve hot.
