Description

These delicious apple muffins are the perfect treat for breakfast or a snack. Packed with diced apples and warm spices, they are moist, flavorful, and easy to make.

Dry Ingredients:

  • 2 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar, packed
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg

Wet Ingredients:

  • 2 large eggs
  • 1/2 cup unsalted butter, melted and slightly cooled
  • 1/2 cup milk
  • 1 teaspoon vanilla extract

Additions:

  • 2 cups peeled and finely diced apples (about 2 medium apples)

Instructions

  1. Preheat the Oven: Preheat the oven to 375°F (190°C) and prepare a muffin tin with liners or by greasing it.
  2. Mix Dry Ingredients: In a large bowl, whisk together flour, sugars, baking powder, baking soda, salt, cinnamon, and nutmeg.
  3. Combine Wet Ingredients: In another bowl, whisk eggs, melted butter, milk, and vanilla until smooth.
  4. Combine Wet and Dry: Pour wet ingredients into dry ingredients and stir gently until just combined. Fold in diced apples.
  5. Bake: Divide batter into muffin cups and bake for 18-20 minutes until a toothpick comes out clean.
  6. Cool and Serve: Let cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.
