Dry Ingredients:

Wet Ingredients:
- 2 large eggs

Instructions
- Preheat the Oven: Preheat the oven to 375°F (190°C) and prepare a muffin tin with liners or by greasing it.
- Mix Dry Ingredients: In a large bowl, whisk together flour, sugars, baking powder, baking soda, salt, cinnamon, and nutmeg.
- Combine Wet Ingredients: In another bowl, whisk eggs, melted butter, milk, and vanilla until smooth.
- Combine Wet and Dry: Pour wet ingredients into dry ingredients and stir gently until just combined. Fold in diced apples.
- Bake: Divide batter into muffin cups and bake for 18-20 minutes until a toothpick comes out clean.
- Cool and Serve: Let cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.
