  • 2 large eggs
  • 1 teaspoon vanilla extract

For the apple layer:

  • 2 large apples, peeled and finely diced
  • 1 tablespoon lemon juice
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon nutmeg
  • 2 tablespoons brown sugar

For the streusel topping:

  • 1/2 cup all-purpose flour
  • 1/4 cup rolled oats
  • 1/4 cup brown sugar
  • 1/2 teaspoon cinnamon
  • 1/4 cup cold unsalted butter, cubed

Instructions

  1. Preheat oven to 350°F (175°C). Line a 9×9-inch baking pan with parchment paper, leaving some overhang for easy removal.
  2. Mix graham cracker crumbs, sugar, and melted butter. Press into pan and bake.
  3. Beat cream cheese and sugar, then add eggs and vanilla. Pour over crust.
  4. Toss apples with lemon juice, spices, and sugar. Spoon over cheesecake layer.
  5. Make streusel topping and sprinkle over apples.
  6. Bake for 40–45 minutes until set. Cool, then refrigerate before slicing.
