- 16 oz (2 blocks) cream cheese, softened

- 2 large eggs
- 1 teaspoon vanilla extract
For the apple layer:
- 2 large apples, peeled and finely diced
- 1 tablespoon lemon juice
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon nutmeg
- 2 tablespoons brown sugar
For the streusel topping:
- 1/2 cup all-purpose flour
- 1/4 cup rolled oats
- 1/4 cup brown sugar
- 1/2 teaspoon cinnamon
- 1/4 cup cold unsalted butter, cubed
Instructions
- Preheat oven to 350°F (175°C). Line a 9×9-inch baking pan with parchment paper, leaving some overhang for easy removal.
- Mix graham cracker crumbs, sugar, and melted butter. Press into pan and bake.
- Beat cream cheese and sugar, then add eggs and vanilla. Pour over crust.
- Toss apples with lemon juice, spices, and sugar. Spoon over cheesecake layer.
- Make streusel topping and sprinkle over apples.
- Bake for 40–45 minutes until set. Cool, then refrigerate before slicing.
