Dough:
- 2 1/4 cups all-purpose flour
- 1/4 teaspoon salt
- 1 cup unsalted butter, softened
- 4 oz cream cheese, softened
- 3/4 cup granulated sugar
- 1 large egg yolk
- 1 teaspoon vanilla extract
Filling:
- 1/2 cup apricot preserves
- Powdered sugar for dusting (optional)
Instructions
- Preheat the oven to 350°F (175°C) and line two baking sheets with parchment paper.
- In a medium bowl, whisk together the flour and salt.
- In a large bowl, beat the butter and cream cheese until smooth. Add sugar, beat until fluffy. Mix in egg yolk and vanilla.
- Gradually add the flour mixture to form a dough. Roll into balls and place on baking sheets.
- Press an indent into each cookie. Fill with apricot preserves.
- Bake for 12-15 minutes until golden. Cool on wire rack.
- Dust with powdered sugar if desired before serving.
Notes
- You can use your favorite jam instead of apricot preserves.
- For extra flavor, add a pinch of finely grated lemon zest to the dough.
