Description

Dough:

  • 2 1/4 cups all-purpose flour
  • 1/4 teaspoon salt
  • 1 cup unsalted butter, softened
  • 4 oz cream cheese, softened
  • 3/4 cup granulated sugar
  • 1 large egg yolk
  • 1 teaspoon vanilla extract

Filling:

  • 1/2 cup apricot preserves
  • Powdered sugar for dusting (optional)

Instructions

  1. Preheat the oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. In a medium bowl, whisk together the flour and salt.
  3. In a large bowl, beat the butter and cream cheese until smooth. Add sugar, beat until fluffy. Mix in egg yolk and vanilla.
  4. Gradually add the flour mixture to form a dough. Roll into balls and place on baking sheets.
  5. Press an indent into each cookie. Fill with apricot preserves.
  6. Bake for 12-15 minutes until golden. Cool on wire rack.
  7. Dust with powdered sugar if desired before serving.
