Instructions
- Prepare the whipped goat cheese: In a medium bowl, whisk together the softened goat cheese, heavy cream, lemon juice, and honey (if using) until the mixture is smooth, creamy, and well combined. Set aside to allow the flavors to meld.
- Prepare the fritter mixture: In a large bowl, combine the chopped artichoke hearts, all-purpose flour, breadcrumbs, grated Parmesan, garlic powder, onion powder, salt, black pepper, egg, chopped fresh parsley, and milk. Mix thoroughly until all ingredients form a thick, cohesive batter.
- Heat the oil: Pour about 2 inches of vegetable oil into a large skillet and heat over medium heat. To test if the oil is hot enough, drop a small spoonful of the batter into the oil; it should sizzle immediately and rise to the surface.
