For the Meatballs:
- 1 lb ground pork (or ground beef or chicken)
- 1/4 cup breadcrumbs
- 1 egg
- 2 tablespoons soy sauce
- 1 tablespoon hoisin sauce
- 1 tablespoon green onions, finely chopped
- 2 cloves garlic, minced
- 1 teaspoon grated fresh ginger
- 1/2 teaspoon sesame oil
- 1/4 teaspoon black pepper
For the Sauce:
- 1/4 cup soy sauce
- 2 tablespoons hoisin sauce
- 1 tablespoon rice vinegar
- 1 tablespoon honey or brown sugar
- 1 teaspoon sesame oil
- 1 teaspoon cornstarch mixed with 1 tablespoon water
For the Yakisoba:
- 12 oz yakisoba noodles (pre-cooked or fresh)
- 1 tablespoon vegetable oil
- 2 cups shredded cabbage
- 1 cup julienned carrots
- 1/2 cup sliced bell peppers
- 2 green onions, sliced
Instructions
- Preheat oven to 400°F (200°C). In a large bowl, mix all meatball ingredients until well combined. Roll into 1-inch balls and place on a parchment-lined baking sheet. Bake for 15–18 minutes, or until cooked through and lightly browned.
- While the meatballs bake, whisk together the sauce ingredients (except cornstarch slurry) in a small saucepan. Bring to a simmer over medium heat. Stir in the cornstarch slurry and cook until thickened, about 1–2 minutes. Toss baked meatballs in the sauce to coat.
- For the yakisoba, heat vegetable oil in a large skillet or wok over medium-high heat. Add cabbage, carrots, and bell peppers. Stir-fry for 4–5 minutes until tender-crisp. Add yakisoba noodles and 1–2 tablespoons water to loosen. Stir in green onions and cook for another 2 minutes. Serve the sauced meatballs over the yakisoba and garnish with sesame seeds or more green onions if desired.
Notes
- You can substitute ramen or soba noodles if yakisoba isn’t available.
- These meatballs can be made ahead and frozen.
- Add chili flakes or sriracha for extra heat.
