For the Soup:

  • 1 tablespoon olive oil or unsalted butter
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 ½ lbs fresh asparagus, trimmed and cut into 1-inch pieces
  • 4 cups vegetable or chicken broth
  • ½ teaspoon salt
  • ¼ teaspoon black pepper

Optional:

  • ½ cup heavy cream or half-and-half
  • Fresh lemon juice, to taste
  • Chopped chives or parsley for garnish

Instructions

  1. Heat oil/butter: Heat olive oil or butter in a large pot over medium heat. Add the onion and cook until softened.
  2. Sauté: Stir in the garlic and cook until fragrant. Add the asparagus, broth, salt, and pepper.
  3. Simmer: Bring to a boil, then simmer for 10–15 minutes until asparagus is tender.
  4. Puree: Remove from heat and blend the soup until smooth. Return to the pot.
  5. Finish: Stir in cream (if using), warm through, adjust seasoning, and add lemon juice if desired. Serve hot, garnished with herbs.

Notes

  • For a dairy-free version, omit the cream or use coconut milk.
  • You can add a diced potato to the soup for more body.
  • This soup also tastes great chilled.
