For the Soup:
- 1 tablespoon olive oil or unsalted butter
- 1 small onion, chopped
- 2 cloves garlic, minced
- 1 ½ lbs fresh asparagus, trimmed and cut into 1-inch pieces
- 4 cups vegetable or chicken broth
- ½ teaspoon salt
- ¼ teaspoon black pepper
Optional:
- ½ cup heavy cream or half-and-half
- Fresh lemon juice, to taste
- Chopped chives or parsley for garnish
Instructions
- Heat oil/butter: Heat olive oil or butter in a large pot over medium heat. Add the onion and cook until softened.
- Sauté: Stir in the garlic and cook until fragrant. Add the asparagus, broth, salt, and pepper.
- Simmer: Bring to a boil, then simmer for 10–15 minutes until asparagus is tender.
- Puree: Remove from heat and blend the soup until smooth. Return to the pot.
- Finish: Stir in cream (if using), warm through, adjust seasoning, and add lemon juice if desired. Serve hot, garnished with herbs.
Notes
- For a dairy-free version, omit the cream or use coconut milk.
- You can add a diced potato to the soup for more body.
- This soup also tastes great chilled.
