- 2 packages (7 oz each) ladyfinger cookies
- 2 tablespoons unsweetened cocoa powder for dusting
- Dark chocolate shavings for garnish (optional)
Instructions
- Egg Mixture: In a heatproof bowl over simmering water, whisk egg yolks and sugar until thick. Remove from heat and cool slightly.
- Mascarpone Cream: Whip heavy cream until stiff peaks form. Fold mascarpone into cooled egg yolk mixture until smooth. Gently fold in whipped cream.
- Assembly: Dip ladyfingers in espresso mixture and layer in a dish. Spread half of the mascarpone cream. Repeat layering. Chill for at least 4 hours.
- Before serving, dust with cocoa powder and garnish with chocolate shavings.
