A delightful twist on classic green beans, these Avocado Caesar Green Beans are tossed in a creamy avocado dressing for a flavorful and healthy side dish.

For the Green Beans:

  • 1 pound fresh green beans, trimmed

For the Avocado Caesar Dressing:

  • 1 ripe avocado, peeled and pitted
  • 1/4 cup grated Parmesan cheese
  • 2 tablespoons plain Greek yogurt
  • 1 tablespoon lemon juice
  • 1 teaspoon Dijon mustard
  • 1 garlic clove, minced
  • 2 tablespoons olive oil
  • Salt and black pepper to taste

For Garnish:

  • 1/4 cup toasted breadcrumbs or crushed croutons
  • Extra grated Parmesan and freshly cracked pepper

Instructions

  1. Prepare the Green Beans: Bring a large pot of salted water to a boil. Add the green beans and cook for 3-4 minutes until crisp-tender and bright green. Drain and transfer immediately to a bowl of ice water to stop the cooking. Drain again and pat dry.
  2. Make the Avocado Caesar Dressing: In a blender or food processor, combine the avocado, Parmesan cheese, Greek yogurt, lemon juice, Dijon mustard, garlic, olive oil, salt, and pepper. Blend until smooth and creamy.
  3. Toss and Serve: Transfer the green beans to a large bowl and toss with the avocado Caesar dressing until evenly coated. Top with toasted breadcrumbs or crushed croutons and sprinkle with extra Parmesan and black pepper before serving.
