For the Green Beans:
- 1 pound fresh green beans, trimmed
For the Avocado Caesar Dressing:
- 1 ripe avocado, peeled and pitted
- 1/4 cup grated Parmesan cheese
- 2 tablespoons plain Greek yogurt
- 1 tablespoon lemon juice
- 1 teaspoon Dijon mustard
- 1 garlic clove, minced
- 2 tablespoons olive oil
- Salt and black pepper to taste
For Garnish:
- 1/4 cup toasted breadcrumbs or crushed croutons
- Extra grated Parmesan and freshly cracked pepper
Instructions
- Prepare the Green Beans: Bring a large pot of salted water to a boil. Add the green beans and cook for 3-4 minutes until crisp-tender and bright green. Drain and transfer immediately to a bowl of ice water to stop the cooking. Drain again and pat dry.
- Make the Avocado Caesar Dressing: In a blender or food processor, combine the avocado, Parmesan cheese, Greek yogurt, lemon juice, Dijon mustard, garlic, olive oil, salt, and pepper. Blend until smooth and creamy.
- Toss and Serve: Transfer the green beans to a large bowl and toss with the avocado Caesar dressing until evenly coated. Top with toasted breadcrumbs or crushed croutons and sprinkle with extra Parmesan and black pepper before serving.
Notes
- Serve chilled or at room temperature.
- For extra crunch, add roasted chickpeas or nuts.
- You can double the dressing to use as a dip for other veggies.
