Avocado Dressing:
- 1 large ripe avocado, peeled and pitted
- 1/2 cup plain Greek yogurt
- 1/4 cup fresh lime juice
- 1/4 cup olive oil
- 1 clove garlic, minced
- 2 tablespoons chopped fresh cilantro
- 1 tablespoon honey
- 1/4 teaspoon ground cumin
- Salt and black pepper, to taste
- 2–4 tablespoons water, to thin if needed
Instructions
- In a blender or food processor, combine the avocado, Greek yogurt, lime juice, olive oil, garlic, cilantro, honey, cumin, salt, and pepper.
- Blend until smooth and creamy.
- Add water 1 tablespoon at a time until the dressing reaches your desired consistency.
- Taste and adjust seasoning if needed.
- Transfer to a jar or airtight container and refrigerate until ready to use.
- Use within 3-4 days for best flavor.
Notes
- For a vegan version, substitute coconut yogurt for Greek yogurt and maple syrup for honey.
- This dressing makes a great dip for veggies or a sauce for tacos and grain bowls.
