Description

This Bacon and Pimento Cheese Quiche combines a savory blend of sharp cheddar cheese, smoky bacon, and tangy diced pimentos baked into a rich, creamy custard within a flaky deep-dish pie crust. Perfect for brunch, lunch, or a light dinner, this quiche offers a delightful mix of textures and flavors that satisfy every bite.

Ingredients

Scale

Pie Crust

  • 1 (9-inch) deep dish pie crust, unbaked

Filling

  • 2 cups thick shredded sharp cheddar cheese
  • 3/4 to 1 cup crumbled cooked bacon (or 1 (2.8-ounce) bag precooked real bacon pieces)
  • 1 (4-ounce) jar diced pimentos, well drained
  • 4 large eggs
  • 1 cup whole milk
  • 1/2 cup heavy cream
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper

Instructions

  1. Preheat Oven: Preheat your oven to 375°F (190°C) and place a large rimmed baking sheet on the center rack to heat up along with the oven. This helps the quiche cook evenly.
  2. Assemble Cheese and Toppings: Sprinkle the shredded sharp cheddar cheese evenly into the bottom of the unbaked pie crust. Next, spread the well-drained diced pimentos over the cheese, and finally, sprinkle the crumbled cooked bacon over the top to distribute the flavors.
  3. Prepare Egg Mixture: In a medium-sized bowl, whisk together the eggs, whole milk, heavy cream, salt, and black pepper until fully combined and smooth. This mixture forms the creamy custard base for the quiche.
  4. Fill the Crust: Carefully pour the egg mixture into the pie crust over the layered ingredients, taking care not to overfill to prevent spillage during baking.
  5. Bake the Quiche: Place the quiche on the preheated baking sheet in the oven and bake for 35 to 40 minutes. Bake until the quiche is set and a knife inserted near the center comes out clean.
  6. Cool and Serve: Remove the quiche from the oven and let it cool on a wire rack or countertop for about 15 minutes before slicing. Serve warm for best flavor and texture.

Notes

  • The precooked bacon pieces can be used as a convenient shortcut if you prefer not to cook bacon yourself.
  • Don’t overfill the crust with the egg custard mixture to avoid overflow during baking.
  • Letting the quiche cool slightly before slicing helps it set properly and slice cleanly.
  • This quiche can be refrigerated and reheated; reheat gently to preserve texture.
  • For a lighter version, consider using reduced-fat cheese or milk alternatives.
