Ingredients
Scale
Pasta and Dressing
- 8 oz short pasta (rotini or elbow macaroni)
- 1 cup sour cream (substitute with Greek yogurt for a lighter dish)
- 1 cup ranch dressing (homemade or store-bought)
Cheese and Meat
- 1 cup cheddar cheese, grated (pepper jack can be used for spice)
- 6 slices bacon, cooked until crispy and chopped into bite-sized pieces
Vegetables and Extras
- ½ cup green onions, chopped (chives as an alternative)
- 1 cup cherry tomatoes, halved (optional)
- 1 cup bell peppers, diced
- 1 cup grilled chicken, diced (optional for added protein)
Instructions
- Cook Pasta: Boil salted water in a large pot and add the pasta. Cook until al dente, about 8-10 minutes. Drain the pasta and let it cool slightly to avoid wilting the other ingredients.
- Cook Bacon: Preheat your oven to 400°F (205°C). Lay bacon slices on a baking sheet in a single layer and bake for approximately 25 minutes or until crispy. Remove, let cool slightly, then chop into bite-sized pieces.
- Prepare Dressing: In a mixing bowl, combine sour cream and ranch dressing. Whisk together until smooth and well blended to create the creamy dressing base.
- Combine Ingredients: In a large mixing bowl, toss the cooled pasta with green onions, cheddar cheese, and half of the chopped bacon. If using, add cherry tomatoes, bell peppers, and grilled chicken for extra flavor and texture.
- Add Dressing: Pour the ranch dressing evenly over the pasta mixture. Toss gently but thoroughly until every piece is coated with the creamy dressing.
- Chill and Serve: For best flavor, refrigerate the pasta salad for at least 30 minutes to allow the flavors to meld. Before serving, sprinkle the remaining bacon on top for a crispy finish. Serve chilled or at room temperature.
Notes
- You can substitute sour cream with Greek yogurt to reduce fat and increase protein.
- Use pepper jack cheese instead of cheddar for a spicier kick.
- Grilled chicken is optional but adds great protein and makes the dish more filling.
- Add fresh herbs such as parsley or dill for extra freshness.
- Make sure to cool the pasta before combining with dressing to prevent sogginess.
- Refrigerate for at least 30 minutes before serving to improve flavor blending.
