Ingredients
Scale
Spicy Mayo
- ¼ cup (60 ml) mayonnaise
- 1 tablespoon (15 ml) ketchup
- 1 teaspoon (5 ml) hot sauce
Main Ingredients
- 1½ tablespoons (21 g) unsalted butter, divided
- 2 bagels, sliced
- 4 large eggs
- 4 slices cheddar or American cheese
- 4 slices cooked bacon
- Kosher salt, to taste
- Freshly ground black pepper, to taste
Instructions
- Prepare Spicy Mayo: In a small bowl, stir together the mayonnaise, ketchup, and hot sauce until well combined. Set aside for later use.
- Butter Bagels: Spread ½ tablespoon (7 g) of butter evenly on the cut sides of the bagels. Set aside to prepare other components.
- Heat Butter and Cook Eggs: Place a nonstick skillet over medium-low heat and melt 1 tablespoon (14 g) of butter. When the butter has melted and stopped bubbling, gently crack the eggs into the pan, spacing them evenly without crowding.
- Cook Eggs: Let the eggs cook undisturbed for about 2 to 3 minutes. Season with kosher salt and freshly ground black pepper to taste. The edges should start to set while yolks remain runny if preferred.
- Flip Eggs and Add Cheese: Carefully flip each egg using a spatula. Immediately place one slice of cheese on top of each egg. Continue cooking for an additional 2 to 3 minutes until the cheese melts and eggs reach desired doneness. For convenience, stack the eggs side by side after cooking to simplify assembly.
- Toast Bagels: Using the same skillet, place the buttered bagel halves cut side down and toast until golden brown, about 2 minutes. Adjust timing for preferred crispiness.
- Assemble Sandwich: Spread a generous amount of prepared spicy mayo onto the toasted sides of the bagels. Layer each with a cooked egg topped with melted cheese, then add bacon slices. Add any extra toppings if desired.
- Finish and Serve: Optionally drizzle extra hot sauce over the assembled sandwich for added spiciness. Serve immediately and enjoy.
Notes
- The butter amounts are divided to both toast the bagels and cook the eggs for rich flavor.
- Use medium-low heat to cook eggs slowly, ensuring they stay tender and the cheese melts nicely.
- Adjust hot sauce quantity in the spicy mayo to suit your preferred spice level.
- For a vegetarian version, omit bacon or substitute with a plant-based alternative.
- Cheese choice can be cheddar, American, or any meltable cheese of your liking.
