Chicken:
- 4 bone-in, skin-on chicken thighs (or breasts)
Marinade:
- 3 tablespoons olive oil
- juice and zest of 1 lemon
- 4 garlic cloves, minced
- 1 teaspoon dried oregano
- 1/2 teaspoon dried thyme
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon paprika
Other:
- 1/2 cup chicken broth
- 1 lemon, thinly sliced
- chopped fresh parsley for garnish (optional)
Instructions
- Preheat the oven: Preheat oven to 400°F.
- Prepare the marinade: In a small bowl, mix together olive oil, lemon juice and zest, garlic, oregano, thyme, salt, pepper, and paprika.
- Marinate the chicken: Place the chicken in a baking dish or oven-safe skillet and pour the marinade over it, rubbing to coat thoroughly.
- Add broth and lemon: Pour the chicken broth around the chicken and tuck lemon slices between the pieces.
- Bake: Bake uncovered for 35–45 minutes until the chicken reaches an internal temperature of 165°F and the skin is golden and crisp, basting with pan juices occasionally.
- Rest and serve: Let the chicken rest for 5 minutes, garnish with parsley, and serve with your choice of sides.

- Marinate the chicken ahead of time (up to 8 hours) for enhanced flavor.
- You can use boneless chicken, but adjust the baking time accordingly.
