Chicken:

  • 4 bone-in, skin-on chicken thighs (or breasts)

Marinade:

  • 3 tablespoons olive oil
  • juice and zest of 1 lemon
  • 4 garlic cloves, minced
  • 1 teaspoon dried oregano
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon paprika

Other:

  • 1/2 cup chicken broth
  • 1 lemon, thinly sliced
  • chopped fresh parsley for garnish (optional)

Instructions

  1. Preheat the oven: Preheat oven to 400°F.
  2. Prepare the marinade: In a small bowl, mix together olive oil, lemon juice and zest, garlic, oregano, thyme, salt, pepper, and paprika.
  3. Marinate the chicken: Place the chicken in a baking dish or oven-safe skillet and pour the marinade over it, rubbing to coat thoroughly.
  4. Add broth and lemon: Pour the chicken broth around the chicken and tuck lemon slices between the pieces.
  5. Bake: Bake uncovered for 35–45 minutes until the chicken reaches an internal temperature of 165°F and the skin is golden and crisp, basting with pan juices occasionally.
  6. Rest and serve: Let the chicken rest for 5 minutes, garnish with parsley, and serve with your choice of sides.
