Chicken:

  • 4 bone-in, skin-on chicken thighs

Marinade:

  • 3 tablespoons olive oil
  • 3 tablespoons fresh lemon juice
  • 1 tablespoon lemon zest
  • 3 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon paprika

Additional:

  • 1/2 red onion, sliced
  • 1 lemon, sliced
  • Chopped fresh parsley for garnish (optional)

Instructions

  1. Preheat the oven: Preheat the oven to 400°F (200°C).
  2. Prepare the marinade: In a small bowl, whisk together olive oil, lemon juice, lemon zest, garlic, oregano, thyme, salt, pepper, and paprika.
  3. Marinate the chicken: Pat the chicken thighs dry and place them in a baking dish. Pour the marinade over the chicken, ensuring each piece is well coated. Add red onion and lemon slices around the chicken.
  4. Bake: Bake uncovered for 35–45 minutes until chicken is golden and cooked through. Baste with pan juices halfway through baking.
