  • 4 cod fillets (about 6 ounces each)
  • Salt and black pepper to taste
  • Crust Mixture:

  • 1/2 cup grated Parmesan cheese
  • 1/3 cup panko breadcrumbs
  • 1 teaspoon garlic powder
  • 1/2 teaspoon paprika
  • 1/2 teaspoon dried parsley
  • 2 tablespoons melted butter
  • 1 tablespoon olive oil
  • Additional:

  • Lemon wedges for serving
  • Chopped fresh parsley for garnish (optional)

Instructions

  1. Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper or lightly grease it.
  2. Season the cod fillets with salt and pepper on both sides.
  3. Prepare the crust mixture by combining Parmesan, panko breadcrumbs, garlic powder, paprika, dried parsley, melted butter, and olive oil in a bowl.
