Instructions
- Preheat the oven: Preheat the oven to 350°F (175°C) and lightly grease a 9×9-inch baking dish with nonstick spray or butter.
- Sauté the onion: Heat olive oil in a small skillet over medium heat. Sauté the chopped onion for 2–3 minutes until softened, then set aside.
- Mix the ingredients: In a large bowl, whisk together the eggs and milk. Stir in the cheddar cheese, feta, chopped spinach, sautéed onion, garlic powder, salt, and black pepper.
- Bake: Pour the egg mixture into the prepared baking dish and spread evenly. Bake for 30–35 minutes or until the center is set and the top is golden.
- Rest and serve: Let rest for 5 minutes before slicing and serving.
