Shrimp:

  • 1 1/2 pounds large shrimp (peeled and deveined, tails on)

Stuffing:

  • 1 cup Ritz cracker crumbs (about 1 sleeve)
  • 1/2 cup panko breadcrumbs
  • 1/4 cup melted butter
  • 2 tablespoons olive oil
  • 1/4 cup finely chopped onion
  • 2 garlic cloves (minced)
  • 2 tablespoons chopped fresh parsley
  • 1 tablespoon lemon juice
  • 1/2 teaspoon Old Bay seasoning
  • Salt and pepper to taste

Additional:

  • Lemon wedges for serving

Instructions

  1. Preheat Oven: Preheat oven to 375°F (190°C) and lightly grease a 9×13-inch baking dish.
  2. Prepare Shrimp: Butterfly each shrimp and lay them flat in the baking dish.
  3. Make Stuffing: Sauté onion and garlic, then combine with cracker crumbs, panko, butter, parsley, lemon juice, Old Bay, salt, and pepper. Spoon mixture over shrimp.
  4. Bake: Bake uncovered for 15–18 minutes until shrimp are cooked and topping is golden brown.
  5. Serve: Serve hot with lemon wedges.

  • You can substitute Ritz crackers with crushed buttery breadcrumbs or saltines.
