  • 1 tablespoon olive oil
  • 1 tablespoon butter
  • 2 cloves garlic, minced
  • ¼ cup balsamic vinegar
  • ½ cup chicken broth
  • 1 tablespoon honey
  • 1 teaspoon Italian seasoning
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 1 cup cherry tomatoes, halved (optional)
  • fresh basil or parsley for garnish (optional)

Instructions

  1. Season the chicken: Season the chicken breasts with salt, pepper, and Italian seasoning.
  2. Cook the chicken: Heat olive oil and butter in a large skillet over medium heat. Add the chicken and cook for 5-6 minutes per side until golden brown and cooked through. Remove and set aside.
  3. Prepare the sauce: In the same skillet, sauté garlic for 30 seconds. Add balsamic vinegar, chicken broth, and honey. Simmer for 2-3 minutes until slightly thickened.
  4. Finish the dish: Add cherry tomatoes if using, cook for 2 minutes. Return chicken to the skillet, spoon sauce over the top. Simmer for 2-3 minutes until heated through. Garnish with fresh herbs.
