- 3 ripe bananas, mashed
- 1 large egg
- 1/3 cup milk
- 1 teaspoon vanilla extract

Instructions
- Dry Ingredients: In a large bowl, whisk together the flour, sugar, baking powder, salt, cinnamon, and nutmeg.
- Wet Ingredients: In a separate bowl, combine the mashed bananas, egg, milk, and vanilla extract. Add the wet ingredients to the dry and stir until just combined; the batter will be thick.
- Frying: Heat about 2 inches of oil in a deep skillet or pot over medium heat until it reaches 350°F. Drop heaping tablespoons of batter into the hot oil. Fry until golden brown and cooked through, about 2–3 minutes per side.
- Serve: Remove the fritters from the oil, drain on a paper towel-lined plate, and dust with powdered sugar or drizzle with honey if desired. Serve warm.

- Don’t overcrowd the pan while frying.
