  • 1/4 cup brown sugar
  • 1/2 cup vegetable oil

Instructions

  1. Preheat the oven: Preheat the oven to 350°F (175°C) and prepare a muffin tin with liners or grease.
  2. Mix dry ingredients: In a medium bowl, whisk together flour, baking soda, baking powder, salt, and cinnamon.
  3. Combine wet ingredients: In a large bowl, mix mashed bananas, granulated sugar, brown sugar, oil, eggs, and vanilla.
  4. Combine wet and dry: Gradually add dry ingredients to wet ingredients, stirring until just combined.
  5. Fill muffin cups: Divide batter evenly among 12 muffin cups.
  6. Bake: Bake for 18–22 minutes until a toothpick comes out clean.
  7. Cool and serve: Let muffins cool in the pan for 5 minutes before transferring to a wire rack to cool completely.
