Description

Fluffy and delicious banana pancakes that are perfect for a cozy breakfast. These pancakes are easy to make and bursting with sweet banana flavor. Serve with extra sliced banana and maple syrup for a delightful morning treat.

Dry Ingredients:

  • 1 cup all-purpose flour
  • 2 tablespoons granulated sugar
  • 2 teaspoons baking powder
  • 1/4 teaspoon salt

Wet Ingredients:

  • 1 cup whole milk
  • 1 large egg
  • 2 tablespoons unsalted butter, melted
  • 1 teaspoon vanilla extract
  • 1 ripe banana, mashed

For Serving:

  • extra sliced banana
  • maple syrup

Instructions

  1. Dry Ingredients: In a large bowl, whisk together the flour, sugar, baking powder, and salt.
  2. Wet Ingredients: In another bowl, whisk together the milk, egg, melted butter, and vanilla extract until smooth. Add the wet ingredients to the dry ingredients and stir until just combined; do not overmix.

    Gently fold in the mashed banana.

  3. Cooking: Heat a non-stick skillet or griddle over medium heat and lightly grease with butter or oil. Pour about 1/4 cup of batter for each pancake onto the skillet. Cook for 2-3 minutes, or until bubbles form on the surface and the edges look set. Flip and cook for another 1-2 minutes or until golden brown and cooked through.
  4. Serve warm with extra sliced banana and maple syrup.

Notes

  • For extra flavor, add a pinch of cinnamon to the batter or fold in chocolate chips.
  • Leftover pancakes can be frozen and reheated.
