Sausages:

- Salt and black pepper to taste

Onion Gravy:
- 2 tablespoons unsalted butter
- 1 large yellow onion, thinly sliced
- 1 tablespoon all-purpose flour
- 1 1/2 cups beef broth
- 1 teaspoon Worcestershire sauce

Instructions
- Preheat oven and cook sausages: Preheat oven to 400°F (200°C). Cook sausages in a skillet until browned, then transfer to the oven to finish cooking.
- Prepare mashed potatoes: Boil potatoes until tender, then mash with milk, butter, salt, and pepper.
- Make onion gravy: Caramelize onions in butter, add flour, then broth and Worcestershire sauce. Simmer until thickened.
- Serve: Plate sausages on mashed potatoes, top with onion gravy, and garnish with chives.
