Main Soup:
- 2 tbsp butter
- 1 small onion, chopped
- 2 cloves garlic, minced
- ¼ cup all-purpose flour
- 3 cups vegetable or chicken broth
- 2 cups whole milk or half-and-half
- 4 cups broccoli florets, chopped small
- 1 cup shredded carrots
- ½ tsp salt
- ¼ tsp black pepper
- Pinch of nutmeg (optional)
- 2 cups shredded sharp cheddar cheese
Instructions
- Melt Butter: In a large pot, melt butter over medium heat.
- Sauté Onion: Add onion and sauté until soft, about 3–4 minutes.
- Add Garlic: Stir in garlic and cook for 1 minute.
- Whisk in Flour: Sprinkle in flour and whisk for 1–2 minutes until golden.
- Add Broth and Milk: Slowly whisk in broth and milk, stirring constantly.
- Simmer: Bring to a simmer. Add broccoli, carrots, salt, pepper, and nutmeg. Simmer for 15–20 minutes.
- Add Cheese: Remove from heat and stir in shredded cheddar until melted.
- Blend (Optional): For a smoother texture, blend part of the soup.
- Serve: Serve hot with bread or crackers.
