A rich and creamy broccoli cheese soup that is both basic and awesome at the same time. This comforting soup is perfect for a cozy meal, combining the goodness of fresh broccoli, sharp cheddar cheese, and a touch of nutmeg.

Main Soup:

  • 2 tbsp butter
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • ¼ cup all-purpose flour
  • 3 cups vegetable or chicken broth
  • 2 cups whole milk or half-and-half
  • 4 cups broccoli florets, chopped small
  • 1 cup shredded carrots
  • ½ tsp salt
  • ¼ tsp black pepper
  • Pinch of nutmeg (optional)
  • 2 cups shredded sharp cheddar cheese

Instructions

  1. Melt Butter: In a large pot, melt butter over medium heat.
  2. Sauté Onion: Add onion and sauté until soft, about 3–4 minutes.
  3. Add Garlic: Stir in garlic and cook for 1 minute.
  4. Whisk in Flour: Sprinkle in flour and whisk for 1–2 minutes until golden.
  5. Add Broth and Milk: Slowly whisk in broth and milk, stirring constantly.
  6. Simmer: Bring to a simmer. Add broccoli, carrots, salt, pepper, and nutmeg. Simmer for 15–20 minutes.
  7. Add Cheese: Remove from heat and stir in shredded cheddar until melted.
  8. Blend (Optional): For a smoother texture, blend part of the soup.
  9. Serve: Serve hot with bread or crackers.
