Green Chile Sour Cream Sauce

  • Freshly ground black pepper, to taste

Instructions

  1. Make the Sauce: In a small bowl, combine sour cream, green chiles, cilantro, garlic, lime juice, kosher salt, and freshly ground black pepper. Stir the mixture until smooth and well incorporated. Chill it in the refrigerator while you prepare the taquitos to let the flavors meld.
  2. Prepare the Taquitos Mixture: In a mixing bowl, thoroughly stir together the refried beans, shredded pepper Jack cheese, shredded cheddar cheese, ground cumin, and chili powder. This mixture will be the flavorful filling for the taquitos.
  3. Warm the Tortillas: Slightly warm the tortillas in the microwave or on a skillet for a few seconds to make them pliable and easy to roll without breaking.
