  • 1 tablespoon olive oil
  • 1 pound ground beef
  • 1 small yellow onion (diced)
  • 2 cloves garlic (minced)
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon tomato paste
  • 4 cups beef broth
  • 1 can (14.5 ounces) diced tomatoes (with juice)
  • 1 cup elbow macaroni (uncooked)
  • 1 cup frozen mixed vegetables

For garnish:

  • Chopped fresh parsley (optional)

Instructions

  1. Heat olive oil: In a large pot over medium heat, heat the olive oil.
  2. Cook ground beef: Add the ground beef to the pot and cook until browned, breaking it apart with a spoon. Drain any excess fat.
  3. Add onion and seasonings: Add the diced onion and cook until softened. Stir in garlic, Italian seasoning, salt, pepper, and tomato paste. Cook for an additional minute.
  4. Add broth and tomatoes: Pour in the beef broth and diced tomatoes with their juice. Bring to a simmer.
  5. Cook macaroni: Add the elbow macaroni and cook uncovered for 8–10 minutes or until tender.
  6. Stir in vegetables: Mix in the frozen mixed vegetables and simmer for 3–4 minutes until heated through.
  7. Adjust seasoning and serve: Taste the soup and adjust seasoning if necessary. Serve hot, garnished with chopped parsley if desired.

Notes

  • You can substitute ground turkey or chicken for a lighter version.
  • For added richness, stir in shredded cheese just before serving.
  • Leftovers can be stored in the fridge, but the pasta may absorb more broth. Add a splash of broth or water when reheating.
