Description

These Beef Enchiladas are a delicious and easy-to-make Mexican-inspired dish perfect for a family dinner. Flavorful ground beef seasoned with spices, wrapped in tortillas, smothered in enchilada sauce, and baked with melted cheese – a comforting classic!

For the beef filling:

  • 1 pound ground beef
  • 1 tablespoon vegetable oil (optional)
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

For assembling:

  • 1 can (10 ounces) red enchilada sauce
  • 8 small flour or corn tortillas
  • 2 cups shredded cheddar cheese or Mexican blend
  • 1/4 cup chopped fresh cilantro (optional)
  • sour cream and lime wedges for serving

Instructions

  1. Preheat the oven: Preheat oven to 375°F (190°C) and grease a 9×13-inch baking dish.
  2. Cook the beef: In a skillet, sauté onion, garlic, and beef until cooked. Season with spices and enchilada sauce.
  3. Assemble: Fill tortillas with beef mixture, roll up, and place in the baking dish. Top with remaining sauce and cheese.
  4. Bake: Cover with foil and bake for 20 minutes, then uncover and bake for another 5-10 minutes until cheese is melted and bubbly.
  5. Serve: Garnish with cilantro and serve with sour cream and lime wedges.
