Beef and Vegetables

  • 1 lb beef (thinly sliced into strips)
  • 2 large carrots (diced into 2-inch pieces)
  • 2 cups broccoli florets
  • 1 large onion (diced into 2-inch pieces)
  • 4 garlic cloves (pressed)
  • Oil (olive or sesame) for frying

Instructions

  1. Prepare the sauce: In a small bowl, combine 1/4 cup hot boiled water, 1 tbsp Beef Better Than Bouillon, and 2 tbsp brown sugar. Stir until fully dissolved. Add 3 tbsp soy sauce to the mixture and set aside.
  2. Cook the beef: Preheat a hot skillet with 1 tsp sesame oil. Add the thinly sliced beef strips and sauté until golden brown and cooked through. Remove from skillet and set aside.
  3. Sauté vegetables: Using the same skillet, add additional sesame or olive oil as needed. Sauté the diced onions until golden brown, then remove and set aside. Next, sauté the diced carrots until slightly softened, then add the broccoli and cook for about 3 minutes. Return the onions to the skillet and press the garlic cloves into the vegetable mixture, stirring well.
  4. Combine beef and sauce: Add the cooked beef back into the skillet with the vegetables. Pour the prepared sauce over the mixture and let it simmer gently for about 2 minutes, allowing flavors to meld.
  5. Add noodles: Incorporate the cooked lo mein noodles into the skillet. Toss everything together thoroughly to ensure the noodles are evenly coated with sauce and mixed with beef and vegetables.
