Beef Stew:
- 2 pounds beef chuck, cut into 1-inch cubes
- 2 tablespoons olive oil
- 1 large onion, chopped
- 3 cloves garlic, minced
- 4 cups beef broth
- 1 cup dry red wine (optional)
- 3 large carrots, peeled and cut into chunks
- 3 medium potatoes, peeled and cut into chunks
- 2 tablespoons tomato paste
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- 2 bay leaves
- 2 tablespoons all-purpose flour
- 2 tablespoons fresh parsley, chopped
- Salt and black pepper to taste
Instructions
- Season the beef cubes: Season the beef cubes with salt and pepper.
- Brown the beef: In a large pot, heat olive oil over medium-high heat. Brown the beef in batches, about 5 minutes per batch, then transfer to a plate.
- Cook the aromatics: In the same pot, add onion and cook until softened. Add garlic and cook for another 30 seconds.
- Add flavorings: Stir in tomato paste and flour, cook for 1-2 minutes. Pour in red wine, then add beef broth, thyme, rosemary, and bay leaves.
- Simmer the stew: Return the beef to the pot, bring to a boil, then reduce heat to low. Cover and simmer for 1.5 hours.
- Add vegetables: Add carrots and potatoes, cover, and cook for another 45 minutes until tender.
- Adjust seasoning: Remove bay leaves, adjust seasoning with salt and pepper. Garnish with parsley before serving.
