For the Beef Stew:

  • 2 pounds beef stew meat (cut into 1-inch cubes)
  • salt and black pepper to taste
  • 1 yellow onion (chopped)
  • 2 cloves garlic (minced)
  • 2 tablespoons tomato paste
  • 2 tablespoons all-purpose flour
  • 3 cups beef broth
  • 1 cup red wine (or additional broth)
  • 2 carrots (sliced)
  • 2 celery stalks (sliced)
  • 1 teaspoon dried thyme
  • 1/2 teaspoon dried rosemary
  • 1 bay leaf

For the Potato Topping:

  • 2 cups mashed potatoes (prepared in advance)
  • 2 tablespoons butter (melted, for brushing)
  • chopped parsley for garnish (optional)

Instructions

  1. Preheat the oven: Preheat oven to 375°F.
  2. Sear the beef: Heat olive oil in a large Dutch oven over medium-high heat. Season beef with salt and pepper, then sear in batches until browned. Set aside.
  3. Cook the vegetables: In the same pot, cook onion until softened. Add garlic and tomato paste, then flour. Pour in beef broth and wine, return beef to the pot, and add carrots, celery, thyme, rosemary, and bay leaf.
  4. Bake the stew: Cover and bake for 1 1/2 to 2 hours until beef is tender. Remove bay leaf.
  5. Add the potato topping: Spread mashed potatoes over the stew, brush with butter, and bake uncovered for 20 minutes until golden.
  6. Serve: Let cool slightly before serving. Garnish with parsley if desired.

Notes

  • You can use leftover mashed potatoes or make fresh while the stew bakes.
  • For extra flavor, sprinkle the top with grated Parmesan before the final bake.
