Zucchini Boats:

  • 4 medium zucchinis
  • 1 pound lean ground beef
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste

Filling:

  • 1 cup marinara sauce
  • 1/2 cup cooked quinoa or rice (optional)
  • 1 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • Chopped fresh parsley for garnish

Instructions

  1. Preheat the oven: Preheat the oven to 400°F (200°C).
  2. Prepare the zucchini: Slice the zucchinis in half lengthwise, scoop out the centers to create boats, season with olive oil, salt, and pepper, and arrange in a baking dish.
  3. Cook the filling: Brown the ground beef, add onion, garlic, marinara sauce, quinoa/rice, Italian seasoning, salt, and pepper. Simmer for 5 minutes.
