Instructions
- Preheat Oven: Preheat the oven to 350°F (175°C) and line two baking sheets with parchment paper.
- Cream Butter and Sugars: In a large bowl, cream together softened butter, brown sugar, and granulated sugar until light and fluffy.
- Add Eggs and Vanilla: Beat in the eggs one at a time, then stir in the vanilla extract.
- Combine Dry Ingredients: In a separate bowl, whisk together the flour, baking soda, baking powder, salt, and cinnamon.
- Combine Wet and Dry Mixtures: Gradually add the dry ingredients to the butter mixture, mixing just until combined.
- Add Mix-Ins: Stir in the oats, raisins or chocolate chips, and nuts if using.
- Bake: Drop rounded tablespoons of dough onto the prepared baking sheets, spacing about 2 inches apart. Bake for 10-12 minutes or until golden brown around the edges but soft in the centers.
- Cool and Serve: Allow the cookies to cool on the baking sheets for 5 minutes before transferring to a wire rack to cool completely.
