  • 1 cup packed brown sugar
  • 1/2 cup granulated sugar

  • 3 cups old-fashioned rolled oats
  • 1 cup raisins or chocolate chips
  • 1/2 cup chopped walnuts or pecans (optional)

Instructions

  1. Preheat the oven: Preheat the oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. Cream butter and sugars: In a large bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy.
  3. Add eggs and vanilla: Beat in the eggs, one at a time, then stir in the vanilla extract.
  4. Combine dry ingredients: In a separate bowl, whisk together the flour, baking soda, baking powder, salt, and cinnamon.
  5. Combine wet and dry ingredients: Gradually add the dry ingredients to the butter mixture, mixing just until combined.
  6. Stir in oats and mix-ins: Stir in the oats, raisins or chocolate chips, and nuts if using.
  7. Bake: Drop rounded tablespoons of dough onto the prepared baking sheets, spacing about 2 inches apart. Bake for 10-12 minutes or until golden brown.
  8. Cool: Allow the cookies to cool on the baking sheets for 5 minutes before transferring to a wire rack to cool completely.
