Eggs:

2 large, beaten

Frozen Peas and Carrots:

1 cup, thawed

Onion:

1 small, diced

Garlic:

2 cloves, minced

Soy Sauce:

3 tablespoons

Oyster Sauce:

1 tablespoon

Sesame Oil:

1 teaspoon

Green Onions:

2, sliced

Salt and Pepper:

To taste


Instructions

  1. Cook Beaten Eggs: Heat 1 tablespoon of vegetable oil in a skillet; add eggs and scramble until fully cooked. Set aside.
  2. Sauté Onion and Garlic: In the same skillet, add remaining oil, onion, and garlic; sauté until fragrant.
  3. Add Peas and Carrots: Cook for 2-3 minutes.
  4. Stir in Rice: Add cold rice, breaking up clumps, and stir-fry until heated through.
  5. Season: Pour in soy sauce, oyster sauce, sesame oil; mix well. Add cooked eggs, toss to combine. Season with salt and pepper.
  6. Serve: Garnish with green onions and serve hot.
