  • pink food coloring
  • colorful sprinkles (optional)

Instructions

  1. Preheat the oven: Preheat the oven to 350°F (175°C). Line a 9-inch round cake pan or springform pan with parchment paper and lightly grease the sides.
  2. Prepare the cookie dough: In a large bowl, cream the butter, granulated sugar, and brown sugar until light and fluffy. Beat in the eggs, vanilla extract, and pink food coloring. In a separate bowl, whisk together the flour, baking soda, and salt. Gradually mix the dry ingredients into the wet mixture. Fold in the white chocolate chips. Press the dough evenly into the prepared pan.
  3. Bake the cookie cake: Bake for 22–26 minutes or until the edges are golden and the center is just set. Cool completely in the pan before frosting.
