  • 1 tablespoon olive oil
  • 1 small yellow onion, diced
  • 2 cloves garlic, minced
  • 1 cup long-grain white rice, rinsed
  • 2 cups low-sodium chicken or vegetable broth
  • 1 (15 oz) can black beans, drained and rinsed
  • 1/2 teaspoon cumin
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon smoked paprika (optional)
  • 1 bay leaf
  • Salt and black pepper, to taste
  • Juice of 1 lime
  • 2 tablespoons chopped fresh cilantro (optional)

Instructions

  1. In a medium saucepan, heat olive oil over medium heat. Add diced onion and cook until softened. Stir in garlic and cook briefly.
  2. Add the rice and sauté to toast slightly. Pour in broth, stir in black beans, cumin, oregano, smoked paprika, bay leaf, salt, and pepper.
  3. Bring to a boil, then reduce heat, cover, and simmer. Cook for 15–18 minutes until rice is tender.
  4. Remove from heat and let sit covered for 5 minutes. Remove bay leaf, fluff with a fork, and stir in lime juice and cilantro before serving.
