Spices
- 1 tsp kosher salt
- 1 tsp black pepper
- 1 tsp smoked paprika
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp oregano
- 1 tsp basil
- 1 tsp thyme
- 1 tsp cayenne pepper
Main Ingredients
- 1½ lb chicken tenderloins
- 1 Tbsp olive oil
Instructions
- Prepare the spice mix: In a large bowl, whisk together kosher salt, black pepper, smoked paprika, garlic powder, onion powder, oregano, basil, thyme, and cayenne pepper thoroughly to create the blackening seasoning.
- Coat the chicken: Cut chicken tenderloins into bite-sized pieces and place them in the bowl with the seasoning. Toss until the chicken pieces are evenly coated with the spice blend.
- Preheat the skillet: Heat 1 tablespoon of olive oil in a large skillet over medium-high heat until hot but not smoking, ensuring the chicken will sear properly.
- Cook the chicken: Add the seasoned chicken bites to the skillet in a single layer. Cook undisturbed for 2 to 3 minutes to develop a crisp, blackened crust. Flip the pieces and continue cooking for another 3 to 4 minutes, or until the chicken is cooked through and reaches an internal temperature of 165ºF.
