Description

This Blackstone Cheeseburger Quesadilla combines the juicy, seasoned flavors of a classic cheeseburger with the crispy, cheesy goodness of a quesadilla, all cooked to perfection on a griddle. Ideal for a quick and satisfying meal, it features ground beef seasoned with savory spices and condiments, melted cheddar cheese, and crunchy pickles and onions wrapped in a buttered flour tortilla and grilled until golden brown.

Ingredients

Scale

Beef Mixture

  • 1 lb ground beef
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1 tbsp ketchup
  • 1 tbsp mustard
  • 1 tbsp Worcestershire sauce

Quesadilla Assembly

  • 4 large flour tortillas
  • 2 cups shredded cheddar cheese
  • 1/2 cup diced onion
  • 1/2 cup diced pickles
  • 2 tbsp butter (for grilling)

Optional Toppings

  • Lettuce
  • Tomato

Instructions

  1. Preheat Griddle: Preheat your Blackstone griddle to medium heat to ensure it reaches the optimal cooking temperature for evenly browning the beef and toasting the tortillas.
  2. Season and Cook Beef: In a mixing bowl, thoroughly combine the ground beef with salt, black pepper, garlic powder, onion powder, ketchup, mustard, and Worcestershire sauce. Spread the seasoned beef on the griddle and cook, breaking it apart with a spatula, until it is fully browned and cooked through. This should take about 7-8 minutes. Remove the cooked beef from the griddle and wipe it clean to prepare for grilling the tortillas.
  3. Prepare Tortillas for Quesadillas: Lightly butter one side of each flour tortilla to promote golden crispiness when grilled. Place a tortilla butter-side down on the preheated griddle.
  4. Assemble Quesadillas: Sprinkle a generous layer of shredded cheddar cheese on one half of the tortilla on the griddle. Add a layer of the cooked ground beef, evenly distribute the diced onions and pickles, then top with an additional layer of cheese to help the quesadilla stick together when folded.
  5. Grill Quesadillas: Fold the tortilla in half over the fillings. Cook each side for 2–3 minutes, pressing gently with a spatula to evenly brown and crisp the tortilla and melt the cheese inside. Carefully flip once to ensure both sides are golden brown.
  6. Repeat and Serve: Repeat the assembly and grilling process with the remaining tortillas and ingredients. Slice each quesadilla into wedges and serve warm, optionally garnished with fresh burger toppings like lettuce or tomato for added freshness and texture.

Notes

  • Swap cheddar cheese for American or pepper jack to vary flavor profiles.
  • Add sliced jalapeños to the filling for a spicy twist.
  • Use low-carb or whole wheat tortillas for a healthier alternative.
