Liquid Ingredients:
- 1 cup milk
- 1 large egg
- 2 tablespoons melted butter (plus more for cooking)
- 1 teaspoon vanilla extract
Dry Ingredients:
- 1 tablespoon granulated sugar
- 1 cup all-purpose flour
- 1 tablespoon baking powder
- 1/2 teaspoon salt
Instructions
- Blend Liquid Ingredients: Add milk, egg, melted butter, and vanilla extract to a blender. Blend on low speed for 10 seconds.
- Add Dry Ingredients: Add sugar, flour, baking powder, and salt to the blender. Blend again until the batter is smooth, about 20–30 seconds.
- Rest the Batter: Let the batter rest for 5 minutes to thicken slightly.
- Cook Pancakes: Preheat a non-stick skillet or griddle over medium heat. Pour about 1/4 cup of batter for each pancake. Cook until bubbles form and edges look set, then flip and cook until golden brown.
- Serve: Repeat with remaining batter. Serve warm with desired toppings.
Notes
- For fluffier pancakes, use buttermilk instead of regular milk.
